Excellent for preparing ingredients. Removes excess water and fishy odor without salt, concentrating the umami. This is a professional cooking tool. Osmotic dehydration sheets firm up ingredients without salt and are different from regular parchment paper.
Achieve fluffy overnight dried fish and prevent sashimi from becoming watery during thawing, locking in umami.
[Estimated dehydration time for regular type] Raw sashimi: 20 minutes to 1 hour (dehydration rate 1-3%), Thawed sashimi: 40 minutes to 2 hours (dehydration rate 2-4%), Grilled or simmered fish: 1 to 3 hours (dehydration rate 3-5%), Overnight dried fish: 12 to 20 hours (dehydration rate 5-10%), Draining water from meat: 1 hour by sandwiching between sheets.
The mechanism of PICHIT is a semipermeable membrane for food containing starch syrup and kelp components. Water and fishy odor components, having smaller molecules, are absorbed by PICHIT. Larger umami components, with larger molecules, remain in the ingredient (fish/meat) without passing through the semipermeable membrane, thus concentrating the umami.
