Seki Kanemura Chinese Cleaver - Used, Re-sharpened

This is a used Sekikanemura Chinese cleaver that has been re-sharpened.

It has been used infrequently, but it is a used item with scratches and dirt. It has been re-sharpened for this listing, so it is ready to use immediately.

The whetstones used were from #400, then #1000, #3000, and #8000. It was sharpened to an angle of approximately 30 degrees in total for both sides, with a 5:5 ratio.

While Chinese cleavers are often used for chopping through bone-in meat, this is typically done with thicker and heavier blades, which this particular knife may not be suited for.

Of course, it can be used for chopping vegetables such as bamboo shoots (called zhí qiē in Chinese).

The blade edge forms a curved arc.

The steel appears to be a general stainless steel. While the thickness is a slight concern, it is hard enough to be sharpened with a slit-type sharpener if it can pass through.

However, as it is a Seki blade, it is likely a good quality item.

The sharpening was done as a hobby, so it is not perfect. Please be aware that there may be sharpening marks.
